   I would start with a bullet weight between 120gr up to about 180 or 200gr max, with a diameter of between .24 and .31 with a velocity of between 2700fps and 3200fps somewhere....... I know, I know...

   I live in twizel and grew up in oamaru and can say from experience any caliber will work fine for the terrain you'll hint on buy an medium size (308ish doesn't really matter tho correct projectile...

   Try them in the oven in a dish, 180 max lower better, give them a roll around every now and then. looking at the ones in the photo, they all started life too hot and so the skin has shrunk before...

   Punctured casing let's out a lot of moisture leading to smaller sausage. You could change to boerewors and cook it a metre at a time and not stress...

   its usually just how hard the filler is packed in and if the piece of fat there drained out it might help if the sos ends are twisted a bit more so they dont open up on the ends like those ones...
