Goat can dry out easily as there is little fat in the meat so retaining as much moisture as possible when roasting in the key to juicy tender results ..... That and not trying to roast up a stinky...

Long slow roast is the key to making it nice and tender. :) I usually do them about 4 hours. Same with wallaby legs.
