Honestly i have shot plenty of 308 projectiles through 7mm dpt baffles (MK1 baffles so cant confirm mk2) a good concrentric to bore thread job is essential but i almost exclusively run a 7mm Stainless baffle on my rifles from the old 223 AR to my 14 inch 308 BLR. I did it because because I measured it up and there was clearance even if minimal I tried it knowing it was my problem and risk and tested it by adding a baffle at a time until i ensured no contact.
As for anodizing i think its a viable reason not to bore it however it will eventually where through but most of my can still have the anodizing even after being run on very short barrels. It helps with corrosion resistance which is a concern depending on where you hunt.
For the cost of baffles i doubt boring them is worthwhile unless you can do it yourself as chances are you will end up with another 7mm or 6.5 etc anyway.
