I used to be of the opinion that wild duck wasn't very good to eat. It's now my family's favourite wild game food. You have to go low and slow as Micky Duck says or hot and fast as I do. Very simple and it comes out like a nice piece of steak. If you overcook it, you end up with liver-flavoured leather.
Pan Fried Duck Breast (skin on)
• Score skin
• Season with salt and pepper
• Fry in pan with butter for 1 minute each side
• Place in oven skin side down for 8 minutes at 200C
• Rest for 5 minutes
• Cut across grain
