    Rig Recipe

    TRy this rather than just frying RIG etc.
    Can of coconut cream poured into a hot gorumet pan. Add a can of diced tomatoes Put some turmeric in, spices that suit..Chilli if you want some spice etc
    Mix spice, thyme, garlic etc. If you want a curry just put the curry paste, can, mixture etc in.
    Throw some sliced Capsicumin and stir and put the rig in chucky pieces. Reduce heat, cover and simmer.
    After just a few minutes throw some uncooked prawns in and spinach over the top, bit of salt, pepper and cover and simmer until fish is cooked . (Doesnt take long)

    Its real good!

    Have to say that was the left over plate, the "real plates : looked like something out of master chef if i do say so myself(tomorrows lunch) and it was 10 out of 10

    While it is not my first choice, rig is perfectly edible and most gets wasted I'd guess. Classic example- a mate of a mate caught at least 30 in a set net at Mahia and was going to throw the whole lot away. I grabbed three but no-one else wanted any. The main thing with rig is trunk and tail them, bleed them fully and scrape out the marrow type stuff that lies along the backbone in the stomach cavity. Avoids the ammonia taint.

    If you kill it gut, trunk and chill it real fast in salt ice (as in on the spot) after catching then my missus thinks its better than snapper..................and so do I BUT if you throw it in the bottom of the boat and fillet it at the end of a long days fishing you will get exactly what you expect and its not nice!!
