    Ok my attempt of roast duck tonight would leave some forum members shaking their heads... Lets just say lucyk there was a packet of macaroons in the cupboard.
    Mine didn't turn out as well as Toby's, still some work to be done on that, but does anyone know if there is a way to draw out the "gamey" smell from duck, my nose can put me off before my taste buds, the gamey smell I can best put it down to smells like wet meat, any cooking method or something I can add to it to draw it out of the final result ?

    I'm far from an expert, in fact when it comes to cooking wild game I'm an absolute beginner, but wrapping the ducks in some really good smoked bacon helped with flavour, smell, tenderness and moisture.

    Wrapping with Bacon helps lots of things in the cooking GM. We wrap our Christmas Turkey with it and the result is bloody marvelous.
    It takes 43 muscle's to frown and 17 to smile, but only 3 for proper trigger pull.

    I have heard ,but never tried it ,that soaking a bird in brine b4 cooking improves it .same with wild rabbit.late ex FIL reckoned soakinem in milk b4 roasting produced a superior product.mind you that was 1/2thru a 9 gallon keg at sons christening party ,and my roast rabbit was oft mistaken for roast chicken.geez that brings back memeories-kokatahi -party capital of NZ.big bugger was christened by fr bill middleton with an uncle HANZ jug courtesy of mine late host johny Weastell of kokatahi pub fame.
