You are talking to a man who likes his basics. Hunter308 , mashed spuds, peas and Maggi gravy go well with a chook done in an oven bag. No need for any of this fancy stuff. If you are roasting spuds etc, throw some mushrooms in for the last 15min. Imagine your shopping list to get a pinch of this and that.
If you want to be extreme, a handful of flour in a shopping bag and a good shake of mixed spices then add legs etc and shake to coat before cooking.
I do like the idea of making a herb/spice butter and putting under the skin
