It is a lot easy to hang/age the carcass whole, and a lot easier to process when it’s hanging somewhere convenient, rather than a scrubby hillside somewhere. Ideal, but not always practical.

A sheet of 240 grit wet and dry on a flat surface, glass pane etc. Lubricate with Kerosene or similar. circular motions or figure of eight, not back and forwards. Check with a straight edge.
