Need a better knife if you have to carry a steel

I was really refering to the Kiwi tradition of having a steel on a pouch.
I measure the worth of a knife by how many deer I can butcher without having to touch it. 3V and Elmax have been outstanding. But then, as you move up the scale of edge holding, the sharpening becomes more difficult.
I've become a Victorinox Swiss Army Knife fan over the last few months .
So here is a few pics of my SAK's and some sheaths I made for them .

That last sheath is cool....is that called 'boned' where the leather looks like its been 'melted' on to the knife shape?

I've been married for 24 years , so as you can imagine I don't do my boning
That type of sheath is what's called Wet Molded .
The leather is wet with water and then moulded to shape using what is called a bone folder ( that's maybe where you got the boned thing from )
Here is a work in progress picture , this one isn't Molded as tightly to the contours as the other one , but you get the idea , my bone folder can be seen to the side of the sheath .

But a guy in the States asked me about sharpening steels (they don’t seem to use them), so I threw this vid together for him.
The first knife is a Hess in 50-100, and the second is a Bark River in A2. Laugh away....
