Sunday Roast this weekend was a leg of wild goat, slow roasted in an oven bag with lemon, onions, rosemary, persimmon and a hot pepper dry rub. Long and slow until it fell off the bone and the oven bag kept it moist. The young nanny had a bit of fat so that helped too.
6 hours at 120-140 degrees

Served with Roast spuds and green stuff with a rich gravy made from the cooking juice. The dry rub wasn't quite the right match for the goat but good to try it and learn for next time.

Verdict, absolutely beautiful delicious burger.
I had one the other night at the mount, Billbob. You're right, great burger.
The cherry sauce was so good I had to make something similar for my hare backsteaks tonight. I browned the trimmings in a pan, then fried onions and garlic in butter in the same pan, then added the cherry paste, red wine, parsley stalks etc etc and reduced until thick. Served with mashed potato and peas

My first visit to NZ, I saw kiwi even those from pacific in winter time still wear shorts, so the reason Ican figure is the food. I like food in here, just Igot small Stomach. Before covid, before I moved to south, I got lots of goats. One meal, I felt hot for the next two days.
