    Im probably the wrong person for that but groper,bluenose,snapper etc all have the same basic bone structures.
    Try taking your wings off first before filleting bigger fish.

    You tube is a great starting point, that said there is a heap of sweet oily meat in the heads and wings ( peteral fin bones) , my import mate smokes the lot including the frame , he says closer to the bone sweeter the meat , which has its benefits chunks of flesh with big bones , great for snacking and fish pies or tossed salads etc

    Fishing with Dad out of Nelson today.
    Some gurnard and kahawai, couple good feeds but was a pretty slow day with more spiky dogs than we would have liked.

    Some of the nicest salmon I've ever tasted was smoked wings n fin bits...your filleting end result looks pretty good to me.

    Hockey season just about done.

    Had a sat / Sun free…burnt Sat doing general stuff, headed to okiwi txt a few folks , VC heading back to the Hoki grounds , Roktoy and family hit the road and we gathered at the batch.

    A simple tea and yarns , into bed.

    Up to a claggy morning out to be met by a long slow swell, bashed some blue cod , and got a couple of shit fish, chain plankton in the water column no bait fish or bird activity, one penguin and one dolphin.

    A slow bite day but we fished the end of the tide and just the start of the flood.

    After a late Friday night on the hill with the lad chasing pigs and deer, we were back home at 9am. A text and a call saw us loading the boat Saturday afternoon and shooting out to Okiwi to meet our hosts. Who promptly offered my wife a better seat and better company on their boat, This saw her promptly abandon ship and ensconce herself in the back of the Stabi taking my new rod with her .

    You guys need to start working weekends and taking weekdays off instead, will be much better for fishing as everyone else will be at work.

    That and a semi decent polish. and a stainless steel scourer. It came up OK for an old tub.
